Awww. I really love that idea!
The only problem being is that he's not really the romantic type of person (which is why he doesn't really respond to letter and things that I write him). 
I really do think I might go with the whole drawing thing, but I get too nervous about trying to make it look great and worry too much about messing up. ><
He's a gamer, so maybe I'll create something related. For Christmas last year, I wanted to make him a ship replica from a Star Trek series out of clay, but I realized just how much time it would take to make one. I'd have to be working on it all year, and trying to hide it from him would be near impossible.
Oh, and the trees where we live (we live in an apartment complex type of deal surrounded by trees) would make it near impossible to see a sunset.
