If it were me, I'd check with my current emotions/stability. If I felt fine, definitely I'd go for it. If I still felt bad and/or odd and anxious, I would wait. Tell them you're getting well but are very interested.

Don't push yourself, but don't totally discount the idea and put yourself into a worse spot. Think of all the options. This job may still be available in the future or another job could be. Maybe you need a transition activity that's not exactly a job but is a good way to evaluate how you'd do in a real job situation at this point.

I get triggered by every job too. That's why I'm going on disability if I can get it. I never know when I'm going to crash and burn. Tough decision.
