My doc thinks I may have PCOS (I will know more Thursday). If the meds you are on aren't helping, you need to see about getting them switched. They have me on a 35 microgram pill right now ("normal" dosage is 20 micrograms).
As far as losing weight, if you are exercising to excess sometimes, is it reasonable to assume you are building muscle? Muscle weighs more than fat. That may be why you aren't losing weight. Do you notice any difference in how your clothes fit? That's usually a better weight loss sign than just plain numbers.
You sound like you have great willpower. You could teach me a few things. Fighting to not develop an eating disorder is hard work. Give yourself some credit. I hope you get some answers soon. Thinking of you.
