Employers in the UK employers are not supposed to discriminate at all, be that race, gender, sexuality, gender identity or disability, including mental health.
To me it looks like they didn't like her, and trying to get her on a technicality, i mean why would she say she is disabled if she was feeling well when applying for that job?

I'm sorry that this happened to you, i was constructively dismissed myself. It's totally unfair, and makes everything far harder than it needs to be.
