From your side of it that does not sound like terribly well-informed or empathetic disabilities counselor. And/or she has chosen an approach that is not working for you and it is very possible that there isn't a lot you can do about any of that.
My college disabilities co-ordinator was a rockstar but before I found her I was royally screwed by the college mental health care professional I went to for help. Long story short I went to her with specific concerns and goals about medication, she told me I didn't need to be on pills and then SURPRISE two months later I'm in the hospital.
My point is that the person who's job it was to help me actually caused me harm. But when I was in crisis the dean of students and the disabilities coordinator came in with guns blazing, which I never expected. I don't know what your college structure is like but you need to find an advocate and it doesn't sound like this person is going to do that for you.
And if you can't find the help you are entitled to on campus there is nothing unusual about bringing in written notes from your therapist and/or doctor.
