I only think this because I usually rely on predicting other peoples behaviour so I know how/what to say next etc.
But it is hard to predict everyones next move in a group as there are so many possible outcomes.
I have no idea why this would trigger me though or why I have this desperate need to be in control of everyone and everything all the time.

This makes total sense to me Abby. This control thing is common. I had to work on this too. We think that by controlling things it helps to keep us safe. What I worked on was convincing myself that I was safe. I worked on boundaries and social skills, etc. so that I could handle whatever came up and this helped me to let go of that need for control.
