Adult education is the hottest thing going these days. Pretty much every university has a "professional studies" program. They go by different names depending on the school, but basically, you take classes one night a week (or on Saturday sometimes) for 4 hours. Classes last 8 weeks. I finished my bachelor's that way. It was tough, as I was also working fulltime, but I wanted it bad enough, so I did it.
