I love sweet taters with just themselves and butter. I make them in the mirowave oven just like white potatoes! When it is just the two of us, it is way easier than making an entire casserole.
This year I'll do a combination of yukons and yams (cooked in the nuker) and just sort of swirl them together after I smash them with a fork on a plate. Just a dab of fat free sour cream in the regular ones and a dab of sugar free maple syrup and butter in the yams.
Never did them this way before, but I know they will be yummy.
