I hope my post was helpful. I sometimes forget that I have a lot more time than most people. Don't forget that you can cook vegetables and keep them in the fridge until you need them. You can reheat them in the microwave. I make a lot of meals such as chilli, bolognese and soup,and freeze several portions. It takes 15-20 minutes to put a good meal on the table. Take Care !
