Unless you are thinking mixed vegetables, I like to take 'cucumber rounds'; they're easy to make, light, and refreshing especially when you know there are going to heavy dishes like at a superbowl party. They're usually a hit and always gone quickly.

You need:
* Cucumber(s) depending on how many you need
* White bread
* A round or decorative round cookie cutter (preferable) or something similar to cut bread
the width of a cucumber.
* Mayo
* Onion (diced)
* Garlic Powder
* Lemon Pepper dried seasoning

-Cucumbers peeled, then run a fork down them long ways, all the way around for texture
and then slice into rounds, not too thin.
-White bread cut into with a round cookie cutter or one with decorative rounded edging.
Can get 3 out of 1 slice.
-Mix mayo, diced onions, dash of garlic powder to taste.
-Place bread down, a dab of mayo mixture on top, then cucumber, and top with a sprinkle of lemon
pepper.
-Transfer onto a decorative plate or travel container. Refrigerate until ready to use. Can be
made up to two days ahead of time.
