I would have to ask two things, 1. what are you going into when you graduate that one class or the other might be more beneficial /applicable to your field or practice; and/or 2. does one of the classes have something in it you are not familiar with that peaks your curiosity that you would like to know more? Then thirdly from a practical standpoint, do anyone of them fit better into your schedule than the others?
For me personally, I know that the classes I have taken in conflict resolution have helped me all areas of my life. Health and Pyschology seems like it would be applicable to many areas as well. I would lean towards it as well personally over Counseling and Psychotherapy. However, I am not in this field anymore and are personal interests. Hopefully someone in the field will weigh in.
Not sure if this helps at all. I wish you luck and hope you enjoy whichever class you choose; I don't think you can go wrong with any of them.
