I've never had crowns or fillings, but sometimes in dental work it can expose nerves in the teeth so they become sensitive. I had a stain on a tooth that was scraped off, now the tooth is perpetually sensitive to different cold foods. I'd look into seeing a new dentist, or at least continue to bug the current one.
