Welcome to PC mrsconfused2012 - I have seen my daughter and my husband at different times become nervous from previous choking episodes. Anxiety can also manifest with physical symptoms like fast heartbeat, shortness of breath, nausea and dry mouth. This dry mouth feeling could make swallowing more difficult and so can worrying about choking as you're drinking or eating.

Regarding your gastrointestinal problems -you should have this looked into...perhaps you need some acid reducing meds or just watch what you eat. I used to take Nexium for heartburn but realized we need a certain amount of acid to digest food and we need acid to process B vitamins. I found great relief by increasing my fiber, watching the foods that aggravate it and what helped me the most was taking Ester C vitamin. Its a buffered vitamin C that makes the stomach more settled.

You could ask for a stomach scope to be done to screen for ulcers or reflux acid erosion on your esophagus and have an ENT look at your throat would also be good. When ever someone is having physical symptoms, doctors should rule that out first before assuming its anxiety. One thing that helped my daughter after she choked on a Popsicle was, to remember she won't die if she chokes a little. The throat will tighten up and feel dry if you're too nervous. I hope this resolves soon.
