The body tends to resist change. It's like it has some kind of internal thermostat that tries to maintain the status quo. When someone who is overweight starts to diet, the body reduces its basal metabolic rate to try to keep what it has stored up. It can be hard to increase what you eat and gain weight too, as the body speeds up its BMR and, as you are experiencing, does what it can to resist change. But keep up what you are doing and it will adjust.
Since rapid or frequent weight fluctuations are more harmful than being under- or overweight, it seems to make sense for the body to react that way.
