I think I heard a similar idea in Stephen Fry: The Secret Life of the Manic Depressive... Also, there has been some research on how a diet can affect one's moods, so I suppose it can be true.

I personally think that exercising is a good way of staying (relatively) stable, but I suppose it depends very much on the person.
