I think they try to make the dish soap smell good. Perhaps the flavour is just a side effect of this.
Antifreeze does, in fact, taste sweet, but it's just because of the chemical make up. I don't think it was anyone's intention to create a sweet tasting product. (mmmm, my favourite! Antifreeze flavour!)
