I am struggling for low fat healthy meals ... I was wondering if anyone would be into sharing some recipes (sorry if this has been done before).

Here it is winter so I find a lot of fresh soups are good (not so much for u summer ppl!).

I often grill fish n have fish and greek salad.

And the one lil standby I just discovered ... sandwich grill and a large flat bread like a turkish/lebanese one (sort of like a tortilla, could use tortilla instead.

The best thing about these breads are that they do not have yeast - much better for a lot of people.

Anyway - i just cooked some (snap-frozen) spinach, put in a lil bit of cheese, broke an egg, and put in some salmon. And some Maldon (rock) salt and chili. Folded it over into a rectangle and grilled, then folded it again so it was a 4-layer sort of pancake (it was a big flatbread).

And grilled.

And ate with leaves (rocket n stuff)

Mmmmmm

I would love to hear others' suggestions for QUICK healthy meals
