I did succeed in making a cheesecake that didn't fall, but it didn't taste as good.
I've moved to a really, really high fat diet recently. Jimmy Moore's been experimenting with it:

So anyway I found another recipe for low carb cheesecake in a book on the ketogenic diet written for parents of epileptic kids. Very similar to the recipe I started with, but with more eggs - and cooked in custard dishes. I'll try it this week and see how it comes out.
