Are you paid for overtime? if not, then I would just work my 40 hours, and that's that. If things don't get done, who's fault is it? You are covering for your supervisor!!!
You cannot do it ALL. There comes a point where you have to just say, I cannot do it ALL. It's either ME or THEM. This is about your mental health and your bodily health!  If he hollers at you, ask him what HE'S been doing!!! Just tell him that YOU need help -- that you just cannot keep working all these hours, that it's too much and you're too stressed out. If he doesn't like it, he can stuff it. What's he gonna do, fire you? I doubt it with all the work that needs doing! 
Don't let him take advantage of you, and that's what he's doing. Take your POWER BACK AND use it. God bless and please take care! Hugs, Lee
