Red hair and green eyes are the Irish look, and the most common. I'd go for a green that's a little bright (but not too bright--should look natural) with some sparkliness to it if you can get it.

However, blue eyes, in a beautiful shade of blue with gold specks is gorgeous on a redhead, too.
