I do not use splenda. It made me very sick. And I read horrible things about what it can do to people. I use kal powdered stevia. At first it can be a bit hard to get used to the taste. But to me, it tastes great now. You can read reviews about it at amazon.com. I buy it locally at vitamin shoppe.
For hot chocolate,
I use chocolate syrup ( recipe follows)
I use almond breeze almond milk "40". thats 40 calories per cup. 1 carb.
Some water.
and a pinch of salt to bring out the chocolate.
combine and heat. It makes a very low calorie low carb hot chocolate.
I also make an ice treat that I love. Here is how I make it
I got a whey powder protein powder. It has 100 calories and 1 gram of carb per serving. I buy a brand from my health food store that is their private label. So I would not know which one to recommend to you.
First, I make some chocolate syrup using water, good quality cocoa powder, vanilla extract and stevia. I cook it well to completely hydrate the cocoa powder. I let the mixture cool. This further hydrates the powder.
Now for the delicious frozen treat recipe.
2) I line the bottom of 5 serving size bowls with a tablespoon of chocolate sauce.
3) I freeze the bowls
4) I put some ice cubes in a blender. I use 8
5) Then I add a serving of the whey protein powder.
6) i add powdered stevia
7) lemon juice and grated rind
8)a bit of vanilla extract
9) some water. ( not as much as you would think).
10)Then I blend it. It ends up doubling in size to become a frothy think drink.
11) I then pour it into the bowls (which have choclate on the bottom of them) that have been in the freezer.
12) I quickly put the frozen bowls back in the freezer and freeze until the lemon whey mixture is hard. I then scrape and eat. Very satisfying. And each serving is around 35 calories and 1 gram of carbs. hows that for a recipe??
I make lots of the choclate sauce in advance.
I can tell you how I do the lemon juice. I grate the rind. Then I cut the lemon into 4 wedges. I peel the rind off just like I was peeling an orange. I make sure I get all the seeds out. Then I put the lemons and grated rind in the blender with a bit of water and blend. I keep it for many days. So I do not have to always be making lemon juice for my delicious frozen treet. This is how I am able to stay sugar free. And very low in carbs.
