Just got back from the grocery store - again. T wants me to consider testing out a gluten free diet for 4 weeks to see if that makes a difference in my energy level. ACK. I'm not sure if I'm going to do it.
But I am going to try some new and different things....bought some kale to make kale chips with....some avocado to put on my salads or maybe grill with veggies...gonna try quinoa for the first time....
A friend of mine sent me a link to a recipe for a bean salad that looks awesome - cannelloni beans with roasted veggies. I'm going to try that. Also planning to make a broccoli soup with a bean base.
Gotta work on improving my health, big time.
I just need to come up with some vegetarian friendly breakfast options that are low carb...and possibly gluten free.
