I really would urge you to take her to the ER now. It's possible it is an acute stress reaction brought on by months of anxiety.
It is very possible it is something much worse. I am really not trying to scare anyone or do the fear monger thing- but if it is anything physical these are bad signs and the sooner she is seen the better off she will be.
Sudden bizarre behavior in officials who have n ever exhibited is a huge red flag to seek medical attention, particularly when accompanied by any injury or fever...
I know the impression might be that "going crazy" can happen in an instant, and for people with chronic mental illness an episode might develop faster than for those without a history.
But very few people do something akin to the "zero to sixty" you are describing. Please seek medical attention, it would be much better to overreact than under react in this case.
This is worth an ER visit.
