For me just about everything I want to save electronically goes into Evernote. The link below describes how you can get the fitbit info into Evernote so that it all together. For your other stuff I would suggest creating a note with a table in it (like a word document) and entering the information as you go. Like maybe date, amount spent, activities, notes. You don't have to use a table. You could just type it in too. The table is just neater.
Alternatively or in addition I have an Evernote smart notebook. Sometimes it's just easier to hand write stuff. So I put it in the notebook and photograph it into Evernote. If you have neat handwriting it will translate it into text. You also don't have to buy a special notebook but you'll just have a picture. The other thing about Evernote is it syncs across everything so if you have a smart phone you can access it there and whatever other computers you have.

There are all sorts of applications that will let you log stuff. Evernote might seem like overkill at first but a. It's free and b. I seriously use it for a ton of stuff. You might get hooked like me

c. Evernote isn't going anywhere anytime soon.
