That really sounds interesting, Stopdog. I once grew wheat. I decided to make bread from "scratch" (was going to do "meat" but the idea of killing rabbits or chickens, etc. I went for bread instead). Just getting a little bit of wheat was a trip; nobody had small amounts of seed; Nebraska, I think it was, wanted to deliver me a half pallet by truck. One New Hampshire seed company said wheat could not grow in Maryland (my husband laughed at that and asked had anyone told Ohio that when the colonies were being settled; I later did my history thesis on my Maryland county, which has wheat sheaves on its flag, it was "saved" by wheat since tobacco was wrecking its soil). I finally found a small enough quantity from California, I should have figured that? I was going to go to the Chesapeake Bay and get water to evaporate for the salt, had a huge sugar maple in my yard the neighbor had tapped before, etc. but got stuck when I tried to "gather" wild yeast from the air in my kitchen :-( My little 4 foot x 4 foot wheat "field" did well though (nothing happened at first, I did not realize that winter wheat took the "season" before coming up the next Spring) but I also couldn't see myself separating wheat from chaff, grinding, etc. so other than a few heads I ate from the plants while standing there in the yard, the squirrels got it all and loved it.
