There is nothing wrong with pursuing the interview: you aren't marrying them, and this is only a commitment to yourself to find out more information about the opportunity and evaluate whether this is something you want to pursue further.

The resignation process can be intimidating. Have you thought about what they would do when you tell them? How they'd react? If they'd try to get you to stay? 2 weeks is standard and I wouldn't give them less than that, but if you can visualize the scenario you might have a better idea about how to approach it.
