I've been working on my diet (and am finding all kinds of stuff that causes me problems... I'm currently trying to limit dairy, avoid grains, avoid weird oils, minimize sugar... etc.) So, I totally get the feeling like a weirdo around food, and that food is HARD. It's hard to find good, nutritious prepared foods - everything seems to be made with total crap. I'm not talking just about nightshades, which don't seem to be a problem for me, but the amount of junky ingredients used is just mind-boggling and SAD.
So, I've started learning to cook... And, I sort of hate it (I'm not good at it, and don't have a big repertoire of recipes yet), but I'm learning.
One of the things I've found... and that's super easy and fast (if you have an immersion blender, even a cheap $20 seems to work ok) - is a recipe to make your own mayonnaise!
Give it a whirl... I actually didn't eat a lot of mayo before, but have been using this to make chicken salads last week, and it's pretty good. (It may be a little "wetter" than regular mayo, but really, seems to work fine for me)...
For the mayo (this will render about ⅔ cup mayo):
- ⅔ cup avocado oil [edit: Or extra light olive oil, cheaper and easier to find]
- 1 egg
- 1 teaspoon lemon juice
- ½ teaspoon dijon mustard
- ⅛ teaspoon garlic powder
- salt and pepper, to taste
Add all mayo ingredients to a tall container, place an immersion blender to the bottom and turn on. Once the mixture begins to become thicker, slowly pull the immersion blender up the container to make sure mixture mixes completely.
