My SO tells me all the time that I am oversensitive - usually when he is telling me everything I do wrong

I do not know when sensitive become oversensitive or if there is such a thing. I think it is more that most people do not know how to deal with people who are emotional. I also need and try to find "me" time as I am a reflective person and need some time to wind down. I have a couple of really trusted friends who I see when I am ready. I do need to make sure I do not read more into things people say to me than is really there and use self talk to question myself when I feel I am "hearing" a negative that is not realy there. Do not lose your sensitivity - learn about yourself and question yourself and embrace yourself
