I think I might even substitute cranberries for the beets as am not a huge beet fan.
TL- I will roast or grill peppers at the beginning of a week to have on hand, or even freeze them and microwave when needed, to throw in/on all sorts of different things. They made a great addition and full of nutrients. That way not having to make them all the time.
