Did you mention your concerns to you doctor? Since you are really concerned about your sleep apnea ask if you can have the endoscopy done with an anesthesiologist present. Not all endoscopy clinics have one on staff so make a request to get it done where one is present.
Anxiety can definitely affect the stomach and bowel. My nerves can give me bad indigestion. I don't know it causes IBS though.
Endoscopy is generally safe. There are a few small risks such as perforation.
I know some of the panic you are going through because I'm having a colonoscopy in December. The bowel prep terrifies me.
