Personally you have spend too much time being concerned about his motives or even meeting him (bleh, don't) as for concern about bumping into him in a professional setting? I would say it's doubtful honestly, but if your were to , just politely walk away. You do not owe him anything.

If it were me I would just send a quick text that your just too busy to make time to fit in a coffee date and wish him a Merry Christmas. The end. If he responds.. Just ignore it.

I have no clue about LI and how it works. His profile/acct disappearing? Meh... more the reason to just distance yourself totally.
