what do you feel when you think you will never see her again? I remember the last day at school after the graduation party and I saw my teacher standing outside and I knew I'd never see her again. I ran outside to the woods and cried so hard, never felt more sad. I think its ok to update her via email in a few months just to tell how you are doing. I think she will appreciate that.
