You got me curious so I had a bit of a google and found this:
Bread collapses during baking:
- Use a thermometer to accurately measure the liquid temperature.
- Use less liquid
- Increase the amount of salt
- Too much yeast was added
- During periods of warm weather with high humidity, use less water and cooler water.
I guess if you are following the recipe then it probably won't be to do with salt or yeast. Maybe the temperature of the water and the amount might need to be adjusted for your climate?
