Universities are often focused on research, so if you don't meet the particular criteria of their studies they aren't interested.

I'm sorry to hear you're having such a hard time finding someone to help. Recently I have been researching the possibility of changing pdocs and have had similar difficulties finding anyone in my area. It's quite shameful how hard it is to find care.

Get yourself on as many pdoc's calendars as you can, even if the wait is long. Maybe someone will have a cancellation and you'll be bumped up. In the meantime, if you feel you are in crisis, I would recommend going to the ER. Not a happy choice, but sometimes the best one available.
