There are no "word processing" jobs anymore (that's what I did for a living for 20 years, now everyone has to do their own word processing or is an "administrative assistant" a very public role) and medical transcription

I would look at the jobs available at your local hospital(s), like "record clerk" and see what they require:
(from my local hospital)
and then see how to get the "experience" (send resume's out to local doctors to see if they need an extra clerk or seasonal help, etc.) If you have friends/family members or their friends who are in the medical field, see if they can find you a job through their contacts (how I heard about and got my second job, a friend of my parents').
Depending on how large a metropolitan area you live near, I would check for medical libraries (often part of university hospitals)? You could get a job there and then that would probably work to show you are interested in the medical profession, etc.
But look in likely places for types of real jobs and what they want for education and experience and start to target for what you need. Maybe you could combine something like working for a clinic/doctor that could help with your social anxiety? :-)
