black bean and cheese enchiladas

lightly sauteed corn tortillas....cover with black beans and shredded cheese.....pour over, to your taste, green chile enchilada sauce made by Hatch.....

nuke til cheese is melted. add one over easy fried egg on top and enjoy....

depending upon what kind of cheese you use, it isn't very fattening. (soy cheese works)

you could also add chopped onions and salsa or pico de gallo. i prefer homemade pico de gallo.....out of my garden........
