Suggestions? I am too afraid to confront her about it since last time we had a discussion about mental health, we stopped talking for nearly a month.

I'm sorry your mother is like that. I have a similar problem, just that my mother doesn't think I have AD/HD, let alone a mental illness. And my stepsister for sure has ADHD and maybe a LD, but her mother won't allow her to get testing because her mom thinks she is normal for a 7 year old to not sit down for dinner, never do her homework, talk excessively, jump on everything (really), be distracted by anything, and much more.
Do you know where she hid it? I am not saying this is recommended at all, but maybe if your pharmacy is close enough, you can fill it yourself by walking over and paying for it? It's probably not in your best interest, let alone fair, but we sometimes need to stick up for ourselves you see.
I don't talk to my mother about mental health either to save argument. She says I'm just normal in terms of anxiety, if not, just a bit higher, even though I have moderate anxiety levels. My mom, in my opinion, thinks mental health as a "all or nothing" thing. Like, you are so severe you can't function in life and are in a mental institution, or you are "normal". Anyways, hope you solve your problem
