I am not sure how it is in your area, but where I am, there is such a shortage of care aids that they don't require background in that kind of work-- so I think you will be okay without having any experience.

The cover letter explaining how your future goals align with their business is a good idea. I wouldn't apologize for gaps. If you could get placed via voc rehab, that would be *awesome*. I would definitely tell them you are interested in this kind of work.
