They do take time. And learning to relax and slow down is a lot more helpful than becoming a ball of stress over wanting to get everything out. The later is approach is counter-intuitive to reaching your ultimate goal: lessening anxiety. I would think that's why your therapist wants to known when you get stressed--so that she can help you learn ways to lessen your reaction to fearful situations and thoughts.
It's taken me a long time to learn that dumping data on a therapist doesn't resolve my panic or stress. It only risks increasing my distress. Going slow and taking it easy is how you learn to get your sea legs in the world, where there are stressors everywhere (as you already know).
