Good luck to you! I'm in the process of interviewing as well. I have my second interview/demo lesson (teaching) on Wednesday. I'm getting more nervous as time goes on. But I always just say I'll be disappointed if I don't get the job but it is what it is. I will find a new job someday.
Don't worry too much about the shakes. It's none of their business where it comes from. Just try to write slowly so you can concentrate more on neatness.
