Brussels sprouts with bacon are delicious. Cook the bacon up crispy, half/quarter the sprouts and cook 'em up in the grease (not too much! They should crunch), add the crumbled bacon back in the pan. I like some minced garlic in there, too, and you can add some toasted pine nuts if you want to get fancy.
