I made chicken salad from leftover roasted chicken:
- white and red chicken meat, diced
- green grapes, halved
- pomegranate seeds and some juice
- pecans (probably roasted - from Trader Joe's)
- diced celery
- mayonnaise
- honey
- salt
- pepper
- apple cider vinegar
It was good, but a little on the dry side. Next time I will increase mayonnaise and also try dicing peeled green apple. I will also try red grapes for a change, or dried cranberries soaked in boiling water, to see what flavor I prefer. If I can find poppy seeds, I will sprinkle them on the salad, too.
It is a very filling salad and a good way to use leftover chicken.
