Do you have a crockpot? If not it's a good thing to invest in. Even when I feel really lousy I can throw a few things in and press start. I like a lot of recipes from A Year of Slow Cooking but there are tons out there (many of which are easier than hers). You can even pre-prep and freeze some meals and then throw it in the pot when you want it. I've never tried this but made some of the meals for my sister when she had a baby. But somethings are as simple as throwing in a whole chicken, put half a lemon in the cavity and seasoning on top and maybe some broth or water (dont' remember but I assume so) and that's it and you'll have leftovers too.
