I've made veg sushi before....I still have the little rolling mat, best involved a cooked mushroom filling which was surprising but it was a recipe that came with from Ming tsai the blue ginger guy. It came with a pretty foolproof rice recipe where you used your knuckle to measure the water....like you spread your hand on the rice and fill up to knuckle level.
