Cauliflower Cheese:
1 cauliflower (2-1/2 to 3 lbs.)
3 tbs butter
2 tbs flour
1/4 tsp nutmeg
1 cup milk
1/2 lb sharp cheese
1 tsp mustard
3 tbs parmesan
salt/pepper
Boil the cauliflower in salted water until almost cooked (about 10 minutes). Drain well, place in a well-buttered baking dish. Melt the butter, add the flour, stirring well, and cook for 3 minutes but don't let it brown. Add the milk gradually and cook for 5 minutes, stirring continuously. Add nutmeg, mustard, salt pepper and grated sharp cheese. Remove from heat, stir well and pour over cauliflower. Sprinkle with parmesan and bake in an over preheated to 375 degrees for 20 minutes.
Use broccoli with or in place of the cauliflower. Add sliced mushrooms, sliced tomatoes or any vegetables you like. For a crusty top use breadcrumbs or crackercrumbs dotted with butter.
