If you start scribbling stuff down while they are talking, they should notice that you are taking notes and wait for you to catch up before they continue. It may be easier to ask them to hold up a sec if you are looking at your notebook.

You will look diligent, like you really want to get things right, if you ask them to slow down so you can write that down - it should impress them!
