Cutting back on carbs has really helped my blood sugars. For me, even eating something that is "Healthy" but carb heavy (like oatmeal, whole grain breads, etc.) raises my glucose level and it takes hours of checking and injecting more and more insulin. Anything that is what they call "slow carb" means that it's going to take a while for me to get back to a healthy blood glucose level.
