I'm so sorry you are going through these emotions right now. Breakups can be incredibly painful sometimes especially when the kind of questions you are asking come up. I remember asking myself similar questions before.
There's not one answer. Maybe he thought he was in love and changed his mind. Maybe he was insincere. My feeling now would be to be fairly suspicious of anyone exclaiming love. I'd look more at what they do rather than what they say.
Talking out loud to myself is a sure sign I'm starting to go manic, but everyone is different.
