I was having cognition problems starting a few years ago, possibly due to lithium. My p-doc suggested going off gluten for awhile. Within a week or two, I got a big boost. Brain fog mostly cleared away. I recently went off lithium and found that I did fine with gluten. The conclusion I draw is that my gluten sensitivity was just strong enough that going off it gave the edge I needed over lithium, but not strong enough to be gluten-free off lithium.
As far as weight goes, it's really hard for me to say if it affected my weight. I lost a bunch of weight in just the last year after I went off of saphris and much of my belly fat went away. Two weeks ago I went off lithium. Then one week ago I went back on gluten. I haven't gained any weight, but strangely enough I gained belly fat. Not sure how that works, but it's definitely happening. Appetite has increased as well which is making things a little more difficult. Is this because of going off lithium or going back on gluten or am I just eating more carbs? Not sure!
Finally, no, it did not affect my bipolar symptoms
