i have made mexican (with cumin and cayenne chili) vegetable soup (with left over beef roast in it), and i'm finding that i can eat all i can hold for 350 calories~! i use beef broth for a base, for flavor, and taters, onions, carrots, celery, bell peppers (tomatoes optional) for the veggies. it's really delish,,, i add some garlic powder just because everything tastes better with garlic
and salt and black pepper at the table. (Only cook til it boils, for 20 minutes, unless you want mush.) i like it al dente.
we got freezing temps, ferocious winds, and finally 6 inches of snow~!
